Chickpea flour, oats, peanut butter, and chocolate combine for a delicious guilt-free gluten-free cookie.
Ingredients:
  • 1 cup brown sugar, packed
  • 0.75 cup butter, softened
  • 0.33333334326744 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract, or more to taste
  • 2 cups chickpea flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup chocolate, chopped
  • 0.5 cup oats
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while you give your baking sheet a quick grease.
  • Combine rich brown sugar, creamy butter, smooth peanut butter, a luscious egg, and fragrant vanilla extract in a bowl and beat until well blended.
  • Combine chickpea flour, cornstarch, baking powder, and salt in a bowl and whisk together. Mix the flour mixture into the peanut butter mixture. Stir in chocolate, oats, and walnuts until dough is well combined. Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 15 minutes.
  • Roll the dough into balls the size of a tablespoon and place them 2 inches apart on the baking sheet.
  • Bake in the preheated oven until golden brown, approximately 12 minutes. Allow to cool on the baking sheet for 3 to 5 minutes before transferring to a wire rack to cool completely.
