"Chickpea flour gives our thin pizza bases a delicious nutty twist. Guests can customize their own pizzas with a variety of toppings."
Ingredients:
  • 300g chickpea flour
  • 150g plain flour
  • 300ml pure (thin) cream
  • 60ml olive oil
  • 2 tsp dried oregano
  • Chargrilled asparagus, to serve
  • Cherry tomatoes, roasted, to serve
  • Prosciutto, thinly sliced, to serve
  • Basil pesto, to serve
  • Green salad leaves, to serve
  • Basil leaves, to serve
  • Ricotta, to serve
  • Polpetti in tomato sugo (see related recipe), to serve
Instructions:
  • Combine chickpea flour, plain flour, egg, cream, oil, oregano, and 2 cups (500ml) water in a bowl and whisk until you achieve a smooth batter with a runny cream-like consistency.
  • Preheat the oven to 150C. Brush a 22cm non-stick frypan with oil over medium heat. Pour 1/2 cup (125ml) batter into the pan, swirling to coat evenly. Cook for 1-2 minutes, then flip and cook for another minute until golden. Keep warm in the oven, loosely covered with foil. Repeat with remaining batter to make 6 pizzas, brushing the pan with oil as needed.
