Thyme and garlic roasted potatoes - the ideal Christmas side dish.
Ingredients:
  • 2kg Kipfler potatoes (see note), peeled, halved lengthways
  • 1 head garlic, unpeeled, cloves separated
  • 10 fresh thyme sprigs
  • 60ml (1/4 cup) extra virgin olive oil
  • Fresh thyme sprigs, extra, to serve
Instructions:
  • Add the potato to a stockpot and cover with water. Bring to a boil over high heat, then simmer on medium for 10 minutes until the potato is partially cooked. Drain the potato.
  • 1. Preheat oven to 200°C. 2. Place potatoes cut-side down in a roasting pan. 3. Lightly scrape the tops with a fork. 4. Pierce the garlic cloves and add them with thyme to the pan. 5. Drizzle everything with oil and season with salt and pepper. 6. Toss well to combine. 7. Roast for 1 hour until golden. 8. Transfer to a serving bowl and garnish with extra thyme.
