Crispy potato bites - the perfect Sunday roast side dish.
Ingredients:
  • 1.5kg desiree potatoes, peeled, cut into 2cm cubes
  • 2 sprigs fresh rosemary, torn
  • 3 sprigs fresh lemon thyme, torn
  • 4 garlic cloves, halved
  • Extra fresh lemon thyme sprigs, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Line a large baking tray with baking paper. In a bowl, mix the potatoes with oil, rosemary, thyme, garlic, salt, and pepper. Ensure all pieces are coated evenly. Spread the potato mixture on the tray, arranging them in a single layer.
  • Roast for 40 to 50 minutes, stirring occasionally until golden and crisp. Serve garnished with extra thyme sprigs.
