Crispy Broiled Catfish Fillets

Lighten up dinner with a Southern twist: crispy cornmeal-coated catfish for a quick and flavorful meal.
Ingredients:
  • 1 egg
  • 1/4 cup milk
  • 1/3 cup yellow cornmeal
  • 1 1/2 teaspoons grated lemon peel
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon pepper
  • 1 lb. catfish fillets
  • 1/2 cup tartar sauce, if desired
Instructions:
  • - Prepare a shallow baking pan by spraying it with nonstick cooking spray. - Beat an egg in a shallow dish or pie pan until foamy, then add milk and mix well. - In another shallow dish, combine cornmeal, lemon peel, salt, thyme, and pepper, mixing well.
  • Coat catfish fillets in flavorful egg mixture and then coat them in cornmeal mixture. Place the fish in a prepared baking dish.
  • Broil the fish until it flakes easily with a fork, turning once, for 8 to 10 minutes about 4 to 6 inches from the heat. Serve with tartar sauce.
