Crispy cake fries with chocolate dip

Churro-inspired cake fries are a party hit! Serve with salted caramel and sprinkles for extra fun.
Ingredients:
  • 450g pkt madeira cake
  • 82.50 ml plain flour
  • 2 eggs
  • 250.00 ml panko breadcrumbs
  • 42.50 gm desiccated coconut
  • Vegetable oil, to deep-fry
  • Dark chocolate, melted
  • Gold and silver coloured sugar
Instructions:
  • Remove the edges from the madeira cake, then slice into 1cm-thick fingers. Spread flour on a plate, whisk eggs in a shallow bowl, and mix breadcrumbs with coconut on another plate.
  • Prepare a baking tray by lining it with baking paper. Gently coat the cake fingers with flour. Dip them in the egg mixture and then coat them with the panko mixture. Place the coated cake fingers onto the prepared tray.
  • Fill a saucepan with oil two-thirds of the way up the side. Heat over medium-high heat until oil reaches 180°C on a cook’s thermometer. Deep-fry cake pieces in batches of 2 for 30 seconds or until light golden. Place on a paper towel-lined tray to drain.
  • Enjoy the warm cake fries with a side of melted chocolate and colorful sugar for dipping.
