Crispy Chipotle Chicken Strips

25-minute meal: Crispy chicken strips with spicy sauce - delicious and quick!
Ingredients:
  • 1/4 cup yellow cornmeal
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon garlic salt
  • 1 lb uncooked chicken breast tenders (not breaded)
  • Cooking spray
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 chipotle chile in adobo sauce (from 7-oz can), finely chopped
  • 1 teaspoon adobo sauce (from can of chiles)
Instructions:
  • Combine cornmeal, chili powder, and garlic salt in a shallow dish. Thoroughly coat the chicken with the cornmeal mixture.
  • In a 12-inch skillet sprayed generously with cooking spray, heat over medium heat. Add chicken strips and spray with cooking spray. Cook for 4 to 5 minutes, turning once, until golden brown on the outside and no longer pink in the center.
  • In a small saucepan, warm the remaining ingredients over medium heat for 3 to 4 minutes, stirring occasionally until heated through.
  • Drizzle the flavorful sauce over the succulent chicken before serving.
