Spicy crispy potatoes, perfect pairing with Barbacoa or steak, quick and enjoyable to prepare.
Ingredients:
  • 1.5 pounds baby red or gold potatoes
  • 0.25 cup Mazola® Corn Oil
  • Spice Islands® Sea Salt, to taste
  • 1 tablespoon canned chipotles in adobo sauce, or to taste
Instructions:
  • In a medium saucepan, simmer potatoes fully submerged in water until tender, about 15 to 20 minutes. Drain and let cool for 10 minutes, then move oven rack to lower third position.
  • Preheat your oven to 450 degrees F and line a baking sheet with foil. Place potatoes on the sheet, giving them some space. Use a spatula to smash them to about 1/2-inch thickness, pressing them back together if needed. Blend oil and chipotles until smooth, then drizzle over the potatoes. Make sure the oil coats them evenly. Roast for 30-40 minutes until crispy and brown. Serve hot right out of the oven.
