Crispy coconut shrimp with quick Bisquick tempura batter, served with tangy orange-apricot dipping sauce. Ready in 30 minutes.
Ingredients:
  • 1/3 cup orange marmalade
  • 1/3 cup apricot preserves
  • 1/2 teaspoon soy sauce
  • 2 eggs
  • 1 cup Original Bisquick™ mix
  • 1 cup shredded coconut
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 lb uncooked medium or large shrimp, peeled (with tail shells left on), deveined
  • 1 1/2 cups coconut oil for frying
Instructions:
  • Microwave the dipping sauce ingredients uncovered in a small microwavable bowl on High for 30 to 50 seconds. Stir until blended and set aside.
  • Beat eggs in a small bowl. In a medium bowl, combine Bisquick mix, coconut, ginger, cardamom, and salt. Stir well.
  • Heat oil in a large skillet over medium heat. Dip shrimp in eggs, then Bisquick mixture, then eggs again, and finally Bisquick mixture. Cook shrimp in batches in the hot oil for 3 to 4 minutes, flipping once, until crispy and golden brown, and shrimp are pink. Drain on paper towels.
  • Serve the sizzling shrimp alongside a flavorful dipping sauce for an exquisite culinary experience.
