Golden brown pan-fried sole coated in egg, mustard, and potato flakes. Served with tangy tartar sauce and fresh lemon wedges.
Ingredients:
  • 2 tablespoons prepared yellow mustard
  • 1.5 cups instant mashed potato flakes
  • 0.25 cup oil for frying
  • 4 (6 ounce) fillets sole
Instructions:
  • Whisk egg, mustard, and salt in a shallow dish. Place potato flakes in a separate shallow dish.
  • In a large heavy skillet, heat oil over medium-high heat until shimmering.
  • Coat fish fillets in the egg mixture, then cover them thoroughly with potato flakes. For an extra crispy coating, repeat the process of dipping in egg and potato flakes.
  • Sear fish fillets in oil until they are beautifully golden on both sides, approximately 3 to 4 minutes per side.
