Quick and flavorful Thai-style fish dish using 6 shortcut ingredients for busy weeknights.
Ingredients:
  • 3 limes
  • 1/4 cup sweet chilli sauce
  • Vegetable oil, for shallow frying
  • 82.50 ml plain flour
  • 6 (130g each) flathead fillets, halved lengthways (see Notes)
  • 180g bag baby leaf salad mix
  • 2 Lebanese cucumbers, cut into 1cm cubes
Instructions:
  • Grate 2 limes to extract the zest, then squeeze out the juice. Combine lime zest, lime juice, and chili sauce in a bowl. Set aside.
  • Heat oil in a large, deep frying pan over medium-high heat until it reaches 5mm up the side of the pan. Season flour with salt and pepper on a plate. Coat fish in seasoned flour, shaking off excess. Cook fish in two batches, turning, for 3 to 4 minutes until golden and cooked through. Drain on a paper towel-lined plate.
  • Arrange salad leaves elegantly on a platter, layering with crispy fish and cucumber. Drizzle with zesty chili sauce, and serve with lime wedges on the side.
