Transform chicken skins into crispy, keto-friendly chicken cracklings - the perfect snack!
Ingredients:
  • 5 chicken leg quarters, raw skin only
  • vegetable oil for frying
  • salt to taste
Instructions:
  • In a large stockpot, submerge the chicken skins in water and bring to a boil. Cook for 10 minutes. Drain the skins and transfer to a cutting board. Using a sharp knife, remove excess fat and slice the skins into 1/2-inch wide strips.
  • Lay the skin on a baking sheet and refrigerate, uncovered, for a minimum of 8 hours.
  • Preheat a large stockpot of oil to 350 degrees F (175 degrees C. Gently lower a handful of skins into the hot oil and fry until crispy, around 4 minutes. Place onto a paper towel-lined plate, sprinkle with salt, and fry the rest of the chicken skin in the same way.
