Create mouthwatering crispy fried chicken: Crunchy exterior, juicy interior.
Ingredients:
  • 1 (4 pound) chicken, cut into pieces
  • 1 cup buttermilk
  • 2 cups all-purpose flour for coating
  • 1 teaspoon paprika
  • 2 quarts vegetable oil for frying
Instructions:
  • Skin the cut-up chicken pieces, if desired.
  • Place the flour in a spacious plastic bag (adjust the quantity based on the amount of chicken). Season the flour with paprika, salt, and pepper to your liking (paprika enhances the chicken's color).
  • Coat chicken pieces in buttermilk, then place a few at a time in a bag with flour. Seal the bag and shake to evenly coat.
  • Lay the breaded chicken on a baking sheet and cover it with a clean dish towel or waxed paper. Allow it to sit until the flour forms a paste-like consistency. This step is essential!
  • In a large skillet, preferably cast iron, heat vegetable oil until extremely hot.
  • Fill the skillet with chicken pieces, ensuring they fit comfortably. Sear the chicken in hot oil until golden brown on both sides.
  • Once browned, lower the heat and cover the skillet. Allow the chicken to cook for 30 minutes until fully cooked but not crispy. Uncover, increase the heat, and fry until crispy.
  • Pat the fried chicken dry on paper towels to remove excess oil, making sure not to overcrowd the pan while frying. Place the finished chicken in a gently heated oven to keep warm as you continue cooking the remaining batches.
