Crispy beer-battered cod fillets with a spicy cornflake crust, fried to perfection.
Ingredients:
  • 1.5 cups beer
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 pound cod fillets
  • 2 cups crushed cornflake crumbs
  • 1 teaspoon Cajun seasoning
  • 1 quart oil for frying
Instructions:
  • In a medium bowl, whisk together beer, flour, egg, garlic powder, salt, and pepper until a smooth batter forms. Add cod fillets and gently stir until evenly coated.
  • In a medium bowl, thoroughly combine cornflake crumbs and Cajun seasoning. Coat all sides of the cod by dipping it in the cornflake mixture.
  • Heat oil in a large, heavy skillet or deep fryer to 365 degrees F (185 degrees C). Fry cod until golden brown and easily flaked with a fork. Drain on a paper towel-lined plate.
