Indulge in our crispy pork belly, a twist on the Italian classic maiale all latte, tender meat with crackling served with steamed spinach and roast potatoes. Ingredients:
  • 1.5kg Pork Belly Roast Boneless, scored
  • 9.20 gm oil
  • 2.40 gm salt
  • 1.20 gm salt flakes
  • 1L milk
  • 1 whole head garlic, halved
  • 4 sage leaves
  • 2 tsp whole fennel seeds
Instructions:
  • Preheat oven to 240C (460F) or 220C (430F) fan-forced.
  • In a 30cm x 25cm metal baking tray, coat the pork with oil and massage the salts into the scored skin. Roast until the skin begins to blister, about 20-25 minutes.
  • Lower oven temperature to 180C or 160C fan-forced. Carefully pour milk around pork, ensuring not to pour any over the skin. Add garlic, sage, and seeds to the milk. Roast for 1 hour.
  • Preheat the oven to 260C or 240C fan-forced. Roast the pork for 10 minutes or until the skin is blistered and puffed all over. Remove from the oven and carefully transfer the pork to a plate. Let it stand, loosely covered with foil, for 10 minutes before carving.
