Crispy rosemary-butter potato skewers

Upgrade your barbecue with these crispy potato skewers.
Ingredients:
  • 1kg potato
  • 2 garlic cloves, peeled
  • 60g butter
  • 20.00 ml roughly chopped fresh rosemary leaves
Instructions:
  • In a large saucepan, add potatoes and garlic, cover with cold water, and bring to a boil over high heat. Cook for 10 to 12 minutes until potatoes are just tender. Drain well and transfer to a large heatproof bowl. Let cool for 10 minutes before proceeding.
  • Using a fork, smash garlic until smooth. In a small saucepan over medium heat, melt butter. Add rosemary and smashed garlic. Stir and cook for 1 minute until fragrant.
  • Skewer the potatoes, place them on a baking tray, and generously brush them with half of the butter mixture. Season with salt and pepper to taste.
  • Preheat a barbecue plate or chargrill over medium heat. Grill skewers, turning occasionally, until golden and crispy, about 10-12 minutes. Place on a plate, drizzle with the remaining butter mixture, season with salt and pepper, and serve.
