Crispy fried semolina crepe noodles - a fun and flavorful side dish for any meal.
Ingredients:
  • 1 large egg, beaten
  • 0.5 cup milk
  • salt to taste
  • 1 pinch white sugar, or to taste
  • 0.5 cup semolina flour
  • 3 teaspoons olive oil, divided
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • Combine egg, milk, salt, and sugar in a bowl, whisk until smooth. Stir in semolina flour until well mixed.
  • Heat a teaspoon of oil in a griddle or pan over medium heat. Pour batter onto the pan, cooking until golden and set, about 2 to 4 minutes per side. Remove from heat and cool for 5 minutes before handling.
  • Roll pancakes into a log shape and thinly slice to create "noodles."
  • In the same pan over medium heat, warm the remaining 2 teaspoons of olive oil. Add pepper flakes and "noodles," and pan-fry until nearly crisp, about 2 to 4 minutes.
