Make crunchy Japanese tempura shrimp with a simple batter. Perfect for any occasion!
Ingredients:
  • 2 cups vegetable oil for frying
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 1 cup water
  • 1 large egg yolk
  • 2 large egg whites, lightly beaten
  • 1 pound medium shrimp, peeled and deveined, tails left on
Instructions:
  • Prepare all your delightful ingredients.
  • Preheat oil in a deep-fryer to 375 degrees F (190 degrees C) until hot.
  • In a large bowl, combine flour, cornstarch, and salt, creating a well in the center.
  • Gently combine water and egg yolk in the center of the mixture until just moistened, resulting in a slightly lumpy batter. Then fold in the egg whites.
  • Coat each shrimp individually in batter, avoiding coating the tails.
  • Gently drop three battered shrimp into the deep fryer and fry until they turn golden brown, approximately 1 1/2 minutes.
  • Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain. Continue this process with the remaining shrimp, battering a few at a time while frying the previous batch.
