Ingredients:
  • 250 g squid gutted, cleaned, from sustainable sources
  • 2 heaped tablespoons wholemeal flour
  • 1 ripe avocado
  • 2 limes
  • 2 teaspoons hot chilli sauce
Instructions:
  • Heat 1cm of olive oil in a large non-stick frying pan over medium-high heat. Slice the squid tubes into 1cm rings, then toss the squid with flour, sea salt, and black pepper until coated. In a bowl, mash avocado with lime zest and juice until smooth. Season to taste and divide between two plates. Test the oil by dropping a piece of squid – if it sizzles and turns golden, it's ready. Cook the squid in batches until golden all over, then drain on kitchen paper. Serve over avocado, drizzle with chili sauce and extra virgin olive oil, and garnish with lime wedges. Enjoy!
