Irresistibly delicious sweet and crispy chicken that will leave you craving more!
Ingredients:
  • 24.40 gm fish sauce
  • 20.00 ml finely grated ginger
  • 1 large garlic clove, finely chopped
  • Pinch of white pepper
  • 600g chicken thigh fillets, excess fat trimmed, cut into 4-5cm pieces
  • 50g cornflour
  • Peanut oil, to deep-fry
  • 125ml (1/2 cup) Sweet Chilli Sauce
  • 1 lime, halved
  • Fresh basil leaves, to serve
  • Steamed rice, to serve
Instructions:
  • In a bowl, mix together fish sauce, ginger, garlic, and pepper. Add the chicken and toss to coat evenly. Chill in the refrigerator for 30 minutes to marinate.
  • In a bowl, coat the chicken with cornflour. Heat oil in a wok over medium heat until it reaches 170°C. Cook chicken in 2 batches for 3-5 minutes until golden, making sure to reheat oil between batches. Drain cooked chicken on a paper towel-lined plate. Discard oil from wok and wipe clean.
  • **Rewritten Step:** Place the wok back on medium heat, pour in the sweet chili sauce, and let it simmer for 1-2 minutes, stirring occasionally, until warmed. Add the chicken and squeeze in the juice of half a lime. Stir well to coat. Transfer the chicken to a serving platter, garnish with basil, and serve with steamed rice and the rest of the lime.
