Delicious tart made with versatile jam, perfect for any occasion. Circles back to Grandma's recipe with a modern twist.
Ingredients:
  • 1 cup butter, room temperature
  • 3 egg yolks
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups apricot preserves
Instructions:
  • Preheat the oven to 350°F (175°C). Prepare a 10-inch pie plate or tart pan by greasing and flouring it.
  • Combine butter and sugar in a large bowl using a wooden spoon until smooth. Add egg yolks one at a time, mixing well. Sift in flour and baking powder, mix until a cohesive dough forms.
  • Set aside a portion of the dough for the lattice top. Roll out the remaining dough on a floured surface to 1/8 inch thickness. Press it into the bottom and up the sides of the pan. Pour the apricot preserves onto the crust and spread evenly. Roll out the reserved dough to 1/8 inch thickness and any crust scraps. Cut into strips and create a lattice pattern over the apricot preserves.
  • Bake until the pastry turns a beautiful golden brown, about 20 to 25 minutes in the preheated oven.
