Crostini - pea and broad bean purée with pecorino

Delicious spring flavors enhanced with a hint of savory cheese.
Ingredients:
  • 1 small handful mint leaves plus extra to serve
  • 1 handful podded peas
  • 1 handful broad beans
  • 1 large handful freshly grated pecorino or Parmesan plus extra to serve
  • extra virgin olive oil
  • lemon juice
  • salt
  • pepper
  • Crostini
Instructions:
  • Mash together a small handful of mint leaves, 2 good handfuls of peas and broad beans until smooth. Mix in a generous handful of grated pecorino or Parmesan, add a few splashes of extra virgin olive oil, lemon juice, salt, and pepper to taste. Spread this mixture on top of hot crostini, sprinkle with more cheese and mint. Enjoy this delicious creation!
