Crown Roast of Pork

Impress with a stunning crown roast of pork filled with flavorful mushroom stuffing.
Ingredients:
  • 8- to 10-lb pork crown roast (about 16 to 18 ribs)
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2/3 cup butter or margarine
  • 2 medium stalks celery, chopped (1 cup)
  • 1 medium onion, finely chopped (1/2 cup)
  • 1 lb fresh mushrooms, sliced (6 cups)
  • 8 cups unseasoned croutons
  • 1 tablespoon chopped fresh or 1 teaspoon dried sage, thyme or marjoram leaves
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • Preheat the oven to 325°F. Season the pork with salt and pepper. Place the pork on a rack in a shallow roasting pan with the bone ends up, and wrap the bone ends with foil to prevent over-browning. Insert an ovenproof meat thermometer into the thickest part of the pork, making sure it doesn't touch the bone or fat. Use a small heatproof bowl or crumpled foil to help the roast keep its shape evenly. Avoid adding water.
  • Roast without a cover for 2 hours and 40 minutes to 3 hours and 20 minutes.
  • While your pork is cooking, prepare the Mushroom Stuffing. An hour before the pork is ready, take it out of the oven and fill the center of the crown with stuffing. Cover the stuffing with foil for the first 30 minutes of cooking.
  • Take the pork out of the oven once the thermometer reads 150°F. Cover it with foil and let it rest for 15 to 20 minutes until the thermometer indicates 160°F. After resting, remove the foil from the bone ends. Serve by placing stuffing in a bowl and slicing the pork between the ribs.
