Crumb Coffee Cake with Peach Preserves

Make a delicious peach preserve crumb coffee cake for brunch or a sweet treat.
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 0.66666668653488 cup softened unsalted butter
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 cup buttermilk
  • 1 large egg
  • 0.75 cup peach preserves
  • 0.5 cup finely chopped almonds
  • 0.33333334326744 cup light brown sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and lightly flour a 10-inch tube pan.
  • In a large bowl, mix together flour, sugar, butter, and salt until well blended using a fork or pastry knife. Reserve 1 cup of the mixture. To the remaining mixture, add baking powder and baking soda, and stir thoroughly.
  • In a separate bowl, combine buttermilk, egg, and vanilla, whisk until smooth. Add this wet mixture to the flour mixture and vigorously stir with a whisk until the batter is smooth and fluffy (about 3 minutes). Pour the batter into the prepared pan and spread it evenly.
  • Heat the peach preserves in the microwave or a small pot until warm. Mash any large fruit pieces. Drizzle the warm preserves over the batter.
  • Mix the flour-butter mixture, chopped almonds, brown sugar, and cinnamon in a small bowl. Sprinkle the crumbs evenly over the preserves.
  • Bake until a toothpick inserted in the center comes out clean, around 40 minutes in the preheated oven.
  • Let the pan cool for 10 minutes on a rack. Remove the outer part of the tube pan and let it continue to cool for another 10 minutes. Gently loosen the cake from the pan by sliding a knife around the bottom. Carefully lift the cake using spatulas and place it on a serving plate. Serve while warm.
