Cinnamon roll coffee cake with crumb topping and sweet glaze - ideal for breakfast or brunch.
Ingredients:
  • 1.5 cups milk
  • 2 large eggs
  • 4 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted and cooled
  • 1 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons ground cinnamon
  • 1 cup unsalted butter, cubed
  • 2 cups powdered sugar
  • 5 tablespoons milk
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking pan.
  • Combine flour, sugar, milk, eggs, baking powder, vanilla, and salt in a large bowl until fully mixed. Gradually add butter and blend well. Transfer the batter to the prepared baking pan.
  • Combine brown sugar, flour, and cinnamon in a bowl. Use 2 knives or a pastry blender to blend in butter until mixture is crumbly. Sprinkle evenly over the batter and swirl with a knife.
  • Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  • Combine powdered sugar, milk, and vanilla in a small bowl to create the glaze. Pour the glaze over the warm cake.
