Cinnamon swirl snickerdoodle cookies - a delicious twist on a classic treat, perfect for any occasion.
Ingredients:
  • 2 large eggs
  • 0.5 cup shortening
  • 2.75 cups all-purpose flour, plus more for rolling out dough
  • 0.5 teaspoon fine salt
  • 0.5 cup butter, softened
  • 2 tablespoons ground cinnamon, or as desired
Instructions:
  • Combine all-purpose flour, baking soda, and salt by sifting them in a bowl.
  • In a separate bowl, use an electric mixer to cream together butter and shortening until well combined. Add sugar and beat until creamy and light for about 5 minutes. Then, add eggs one at a time, beating well after each addition. Lastly, mix in the flour mixture until the batter is smooth.
  • Sprinkle flour on a work surface and roll out cookie dough with a floured rolling pin to form a 1/4-inch thick rectangle. Generously sprinkle cinnamon over the dough. Gently roll up the dough into a log, starting on a long side. Wrap tightly in plastic wrap and refrigerate for 2 to 3 hours.
  • Heat your oven to 350 degrees F (175 degrees C).
  • Gently slice the dough log into 1/4-inch pieces without flattening the cookies, then place them on a baking sheet without greasing it.
  • Bake until the edges are lightly golden, around 12 minutes, in the preheated oven.
