Delicious cinnamon roll cookies topped with caramel and pecans.
Ingredients:
  • 2.25 cups bread flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1.25 cups brown sugar
  • 1 cup butter, melted
  • 0.25 cup white sugar
  • 1 egg yolk
  • 2 tablespoons milk
  • 1.5 teaspoons vanilla extract
  • 1 cup white chocolate chips
  • 1 cup pecan pieces
  • 12 individually wrapped caramels, unwrapped, or more as needed
Instructions:
  • In a bowl, whisk together flour, cinnamon, salt, and baking soda. In a separate bowl, combine brown sugar, butter, and white sugar; add egg, egg yolk, milk, and vanilla extract; mix until well combined.
  • Gently combine flour mixture with butter-sugar mixture until dough forms; mix in white chocolate chips and pecans. Chill dough in the refrigerator for at least 30 minutes.
  • Preheat the oven to 375°F (190°C) for a perfectly heated cooking environment.
  • Place rounded tablespoons of dough onto a baking sheet.
  • Place the cookies in the preheated oven and bake for 7 minutes. Then rotate the baking sheet and bake for an additional 8 minutes until the cookies are golden brown. Let the cookies cool completely on a wire rack.
  • Melt caramels in the microwave for 30 seconds to 1 minute. Drizzle the warm caramel over the cooled cookies for an indulgent finish.
