Caramel Cinnamon Rolls

Indulgent caramel pecan rolls - a decadent upgrade from traditional cinnamon rolls.
Ingredients:
  • 1.5 cups milk
  • 1.5 teaspoons salt
  • 0.5 cup shortening
  • 0.5 cup white sugar
  • 2 (.25 ounce) packages active dry yeast
  • 6 cups all-purpose flour, or more as needed
  • 0.75 cup brown sugar
  • 2 tablespoons ground cinnamon
  • 1.5 cups brown sugar
  • 0.75 cup butter
  • 0.75 cup pecan halves
  • 6 tablespoons light corn syrup
Instructions:
  • In a small saucepan, warm the milk over medium heat until it starts to bubble, approximately 5 minutes. Add salt, shortening, and 1/2 cup sugar. Allow the mixture to cool until it reaches lukewarm temperature, which should take at least 10 minutes.
  • In a bowl, combine yeast with 1/4 cup warm water. Pour this into the milk mixture along with flour and eggs. Mix thoroughly, cover loosely with a damp cloth, and allow the dough to rise until doubled in volume, approximately 1 hour.
  • Gently deflate the dough, cover it, and allow it to rise once more until it doubles in volume, approximately 40 minutes.
  • On a lightly floured surface, roll the dough into three 9x15-inch rectangles and spread 2 tablespoons of butter on each rectangle.
  • Combine 3/4 cup of brown sugar and cinnamon in a bowl. Evenly sprinkle the mixture over the 3 rectangles. Roll each rectangle tightly starting from the long side. Cut into 9 equal slices to make a total of 27 rolls.
  • Preheat your oven to 375°F (190°C) for optimal cooking conditions.
  • Mix together the 1 1/2 cups of brown sugar, 3/4 cup of butter, pecans, and corn syrup in a bowl. Divide the mixture evenly among 3 baking pans.
  • Once the caramel is bubbly, bake in the preheated oven for 5 to 10 minutes. Take out from the oven and arrange 9 rolls in each pan. Allow the rolls to rise again until doubled in volume, approximately 40 minutes.
  • Bake in a hot oven until golden brown, approximately 30 minutes. Immediately invert rolls onto another dish or aluminum foil and serve warm.
