Cinnamon roll cookies with sweet glaze for a delicious twist on classic flavors.
Ingredients:
  • 0.75 cup brown sugar
  • 0.5 cup unsalted light butter
  • 1 tablespoon granular no-calorie sucralose sweetener (such as Splenda®)
  • 0.25 teaspoon baking powder
  • 2 cups all-purpose flour
  • 1 large egg white
  • 1 tablespoon powdered sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon granular no-calorie sucralose sweetener (such as Splenda®)
  • 1 cup powdered sugar, or as needed
  • 1 tablespoon skim milk, or as needed
  • 1 pinch ground cinnamon
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a cookie sheet.
  • Cream together brown sugar, butter, and sweetener with an electric mixer until velvety. Incorporate egg, vanilla, cinnamon, and baking powder; blend thoroughly. Slowly fold in flour until a slightly sticky mixture forms.
  • Dust your hands with flour, shape the dough into 18 logs by rolling and pinching, then place them on the baking sheet and form each log into a cinnamon roll shape.
  • Make cookie top coat: Place egg white in a small bowl. In another bowl, combine powdered sugar, cinnamon, and sweetener. Brush egg white on each cookie, then sprinkle with the sugar topping.
  • Bake in the preheated oven for 7 minutes until slightly soft. Allow the cookies to cool for 5 minutes before serving.
  • Make the icing: Combine 1 cup of powdered sugar, 1 tablespoon of milk, vanilla, and cinnamon in a pot over low heat; stir until melted and well combined, adjust the thickness with extra sugar or milk as desired.
  • Drizzle cookies with icing and allow to rest for 3 minutes before enjoying.
