Cinnamon roll pancake with sweet swirl filling and icing - a kid-friendly twist on a classic!
Ingredients:
  • 0.75 cup milk
  • 2 tablespoons white distilled vinegar
  • 1 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 large egg
  • 2 tablespoons butter, melted
  • 1.5 teaspoons vanilla extract
  • 5.5 tablespoons packed brown sugar
  • 0.25 cup butter, melted
  • 1.5 teaspoons ground cinnamon
  • 0.25 cup butter, softened
  • 2 ounces cream cheese, at room temperature
  • 0.75 cup confectioners' sugar
  • 0.5 teaspoon vanilla extract

Instructions:
  • Combine the milk and vinegar in a bowl and let it sit for 5 minutes until the milk slightly sours.
  • Combine flour, white sugar, baking powder, baking soda, and salt in a separate bowl. In another bowl, whisk together egg, 2 tablespoons melted butter, and 1 1/2 teaspoons vanilla extract with milk. Gradually pour the milk mixture into the flour mixture, whisking continuously until just moistened and evenly combined. It's okay to have lumps in the batter.
  • Mix brown sugar, 1/4 cup melted butter, and cinnamon in a small bowl. Set up a 1-quart resealable bag inside a glass or cup. Transfer the cinnamon mixture into the bag and chill until it reaches a toothpaste-like consistency, approximately 10 minutes in the refrigerator.
  • In a microwave-safe bowl, blend 1/4 cup softened butter and cream cheese. Microwave for 40 seconds. Whisk or stir until smooth. Heat and stir until fully melted. Mix in confectioners' sugar and 1/2 teaspoon vanilla until icing is smooth.
  • Preheat a griddle or skillet over medium heat, then spray with cooking spray. Pour 2/3 cup batter in the center. Cook until bubbles form, about 2 to 3 minutes. Snip off 1 corner of the filling bag and swirl over pancake, keeping a border from the edges.
  • Flip the pancake and cook until the other side is lightly browned, approximately 2 to 3 minutes. Drizzle with icing. Repeat the process for the remaining pancakes, making sure to spray the griddle with cooking spray each time.
