Delicious cinnamon roll cookies with cream cheese icing - irresistible treat!
Ingredients:
  • 1 cup butter, softened
  • 2/3 cup white sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1 tablespoon vanilla
  • 1 egg, lightly beaten
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon or apple pie spice
  • 2 ounces cream cheese, softened
  • 1 tablespoon butter, softened
  • 3/4 cup confectioners sugar
  • 2 to 3 tablespoons heavy cream
Instructions:
  • Assemble all the ingredients.
  • Cream 1 cup of butter in a large bowl using a stand mixer fitted with a paddle attachment on medium-high speed for 30 seconds.
  • Combine the white sugar and salt, then beat on medium speed for 2 minutes, scraping the bowl as necessary.
  • Incorporate egg and vanilla into the mixture by vigorously mixing.
  • Slowly incorporate the flour while mixing on low speed.
  • Transfer the dough from the mixer onto plastic wrap. Shape it into a rectangle, wrap it in the plastic wrap, and chill until firm (at least 1 hour).
  • Coat the dough liberally with flour, then roll it out into a 12x10-inch rectangle on a generously floured large piece of parchment paper.
  • Coat dough with the gently whisked egg.
  • Combine the brown sugar and cinnamon, then generously sprinkle the mixture over the dough.
  • Roll up dough tightly, starting from one long side.
  • Wrap the roll in plastic wrap and chill on a baking sheet or tray in the freezer for 30 minutes, or until it is firm enough to slice.
  • Preheat the oven to 375 degrees F (190 degrees C), then line a cookie sheet with parchment paper. Cut the cookie dough roll into 1/4-inch slices using a thin-bladed, serrated knife.
  • Arrange the dough 2 inches apart on the prepared cookie sheets. Bake the cookies until they are set and the bottoms are lightly browned, for 8 to 10 minutes. Let them cool on the cookie sheet for 1 minute, then transfer to a wire rack to cool completely.
  • While you wait, make the icing by combining cream cheese and the remaining 1 tablespoon of butter in a small bowl and whisking together until smooth.
  • Combine confectioners sugar with just the right amount of cream until it reaches a perfect drizzling consistency for the icing.
  • Drizzle the chilled cookies with luscious cream cheese icing.
