A comforting and satisfying midweek meal loved by the whole family.
Ingredients:
  • 750g small cleaned calamari hoods
  • 250.00 ml plain flour
  • 3 eggs
  • 40.00 gm cold water
  • 1000.00 ml fresh white breadcrumbs
  • canola oil, for deep-frying
  • Hot chips, to serve
  • Lemon wedges, to serve
  • Tartare sauce, to serve
Instructions:
  • Prepare your workspace by lining a baking tray with baking paper. Cut the calamari into 1cm-thick rings. Set up a breading station with three bowls: one with flour, salt, and pepper, another with beaten eggs and water, and the third with breadcrumbs.
  • First, gently coat the calamari rings in flour in small batches. Next, dip them into the egg mixture and then generously coat them in breadcrumbs, pressing firmly with your fingertips to ensure they are fully covered. Finally, arrange the coated calamari rings on a lined baking tray.
  • Preheat the oven to 150°C. Fill a deep, heavy-based saucepan or wok one-third of the way with oil. Heat over medium-high heat. Cook the calamari rings in batches for 2 to 3 minutes until they are a light golden color.
  • Transfer the calamari to a wire rack over a lined baking tray. Keep it warm in the oven as you cook the rest of the calamari. Serve with chips, lemon wedges, and tartare sauce.
