Spicy crumbed squid

Ingredients:
  • 400g squid tubes, cleaned
  • 62.50 ml plain flour
  • 625.00 ml breadcrumbs made from day-old bread
  • 7.50 gm cumin powder
  • 3 tsp coriander powder
  • 5.00 gm sweet paprika
  • 12.00 gm sesame seeds
  • extra light olive oil, for cooking
Instructions:
  • Cut the squid tubes in half and then into 5cm pieces. Put the eggs in a shallow bowl and whisk them. Next, place the flour and breadcrumbs on separate plates. Combine spices and sesame seeds with the breadcrumbs and mix thoroughly.
  • Gently dust squid with flour, removing any extra. Dip squid in egg, then generously coat in breadcrumbs.
  • In a medium heavy-based saucepan, add enough oil to reach one-third up the side of the pan. Heat the oil over medium-high heat. Cook the squid in batches for about 2 minutes until golden. Drain on a paper towel before serving.
