Simple and refreshing recipe, ideal for summer.
Ingredients:
  • 2 fresh red chillies
  • 1 clove of galic
  • sea salt
  • freshly ground black pepper
  • 125 g softened unsalted butter
  • 1 lime
  • 2 x packs of Created with Jamie Crunchy Cajun Chicken Fillets
  • ½ bunch of fresh coriander
  • 2 carrots
  • 1 zucchini
  • 1 apple
  • ¼ small red cabbage
  • 4 tablespoons Greek yoghurt
  • extra virgin olive oil
  • 4 corn on the cobs
Instructions:
  • Preheat the oven to 190°C. Finely chop one chilli and peel the garlic. Crush the chopped chilli, garlic, and a pinch of sea salt into a paste using a pestle and mortar. Transfer to a bowl, add butter, a pinch of pepper, and grated lime zest, then chill in the fridge. Follow chicken cooking instructions. Reserve half the coriander leaves, chop the rest, and slice the other half of the chilli. Peel and grate the carrots and zucchini along with apple and cabbage. Combine in a bowl with yogurt, olive oil, lime juice, salt, and pepper. Add chopped coriander and more lime juice if desired. Grill corn until charred, then top with chili butter. Serve with chicken, slaw, sliced chilli, and coriander leaves.
