Crunchy Romaine Salad

Crunchy ramen noodle salad with pecans and romaine lettuce - bursting with flavor and easy to make.
Ingredients:
  • 0.75 cup canola oil
  • 0.5 cup red wine vinegar
  • 1 tablespoon soy sauce
  • salt and ground black pepper, to taste
  • 1 (3 ounce) package ramen noodles
  • 0.25 cup unsalted butter
  • 1 cup chopped pecans
  • 1 bunch broccoli, coarsely chopped
  • 1 head romaine lettuce, torn into bite-size pieces
  • 4 green onions, chopped
Instructions:
  • In a sealed jar, blend sugar, oil, vinegar, soy sauce, salt, and pepper until combined. Then, crush ramen noodles into small pieces, removing the flavor packet.
  • In a skillet over medium heat, melt butter. Cook and stir noodles and pecans until browned, approximately 5 minutes. Drain on paper towels and let cool.
  • In a large bowl, gently mix together the noodles, pecans, broccoli, romaine lettuce, and green onions. Add 1 cup or more of dressing and toss until everything is evenly coated. Enjoy!
