Crunchy sesame pork with soba noodle salad

"Baked Asian pork schnitzel, healthier and just as flavorful as the traditional version."
Ingredients:
  • 4 x 125g pork schnitzels (uncrumbed)
  • 187.50 ml panko breadcrumbs
  • 18.00 gm sesame seeds
  • 20.60 gm milk
  • Olive oil cooking spray
  • 180g dried buckwheat soba noodles
  • 200g snow peas, trimmed, halved diagonally
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 250.00 ml bean sprouts, trimmed
  • 3 green onions, thinly sliced
  • 87.45 gm Japanese sesame soy dressing
  • 6.00 gm sesame seeds, toaste, extra
  • Lime wedges, to serve
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a baking tray with parchment paper.
  • Individually sandwich schnitzels between plastic wrap. Flatten to a 4mm thickness using a meat mallet or rolling pin.
  • Mix breadcrumbs and sesame seeds on a plate. Whisk milk and egg together in a bowl. Gently dip each schnitzel in the egg mixture, then coat with breadcrumb mixture. Transfer to a prepared tray and lightly spray with oil.
  • Bake for 6 to 8 minutes, then flip and continue cooking for another 5 to 6 minutes until golden brown.
  • While the noodles cook in a large pot of boiling salted water for 3 to 4 minutes, add snow peas in the last minute until tender. Drain and then rinse under cold water. Transfer the noodles to a large bowl and mix in cucumber, sprouts, onion, dressing, and extra sesame seeds. Toss everything together to combine. Slice the schnitzels into 2cm pieces and serve with the noodle salad and lime.
