Family favorite recipe.
Ingredients:
  • 2 large desiree potatoes, cut into 3cm pieces
  • 200g semi-dried tomatoes, coarsely chopped
  • 100g Turkish bread, finely chopped
  • 100g tasty cheese, grated
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 600g beef mince
  • 1 large carrot, peeled, finely chopped
  • 44.40 gm tomato paste
  • 3 x 400g cans crushed tomatoes
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the onion and garlic, cook and stir occasionally for 5 minutes until the onion is soft. Then add the mince and cook, stirring with a wooden spoon to break it up, for 15 minutes until it's nicely browned.
  • Add the carrot and cook, stirring, for 5 minutes until slightly softened. Stir in the tomato paste and cook for 2 to 4 minutes. Finally, add the crushed tomatoes, increase the heat to high, and bring to a boil.
  • Lower the heat to medium-low and let the sauce simmer without a lid for 20 to 30 minutes until it thickens. Season with salt and pepper to taste.
  • Place the potatoes in a saucepan and cover them with cold water. Bring to a boil over high heat, then reduce to medium and cook for 6 to 8 minutes until just tender. Drain the potatoes and add them, along with the tomatoes, to the mince mixture.
  • Preheat the oven to 180°C, then spread the mixture into an 8-cup ovenproof dish. Top with breadcrumbs and cheese. Bake for 40 to 50 minutes until golden and hot (cover if browning too fast). Serve and enjoy!
