Savor a crisp, crusty loaf with your Italian feast.
Ingredients:
  • 832.50 ml bread and pizza plain flour
  • 250.00 gm warm water
  • 7g sachet dried yeast
  • 20.00 gm caster sugar
  • 2.40 gm salt
  • 18.20 gm olive oil
  • 20.60 gm milk
Instructions:
  • In a large bowl, combine 1 2/3 cups flour, 1/2 cup warm water, yeast, and sugar. Mix with your hands until well combined. Knead for 5 minutes until the dough is smooth and elastic. Transfer the dough to a large lightly oiled bowl, cover, and let stand overnight in a cool, dry place.
  • Mix salt, the rest of the flour, and warm water into the dough. Combine thoroughly using your hands. Transfer the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover it, and let it sit for 1 hour until it doubles in size.
  • Prepare a baking tray by lining it with baking paper. Drizzle the dough with oil and knead it in a bowl for 1 minute until the oil is well incorporated. Transfer the dough onto a flat surface without flour and knead for 5 minutes until smooth and elastic. Shape the dough into a 24cm-long oval and place it on the prepared tray. Make 4 to 5 shallow slits in the dough. Cover it with a clean tea towel and let it sit for 1 hour until doubled in size.
  • Preheat your oven to 240°C/220°C fan-forced. Place a dish with warm water on the bottom shelf. Brush the dough with milk and bake for 20 minutes until golden and hollow-sounding when tapped. Cool on a wire rack and then enjoy your delicious creation.
