Savory Cuban black beans with a hint of sweetness, perfect alone or on top of rice.
Ingredients:
  • 1 pound black beans, washed
  • 0.25 cup olive oil
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 6 cloves garlic, peeled and minced
  • 5 cups water
  • 1 (6 ounce) can tomato paste
  • 1 (4 ounce) jar diced pimentos, drained
  • 1 tablespoon vinegar
  • 2 teaspoons salt
  • 1 teaspoon white sugar
  • 1 teaspoon black pepper
Instructions:
  • In a large saucepan, cover the beans with water and soak for 8 hours or overnight. Drain the beans before using.
  • In a medium saucepan over medium heat, sauté onion, green bell pepper, and garlic in oil until tender and fragrant.
  • Add the drained beans, water, tomato paste, pimentos, and vinegar into the onion mixture. Season with salt, sugar, and pepper. Bring to a boil, then cover, reduce heat, and simmer for 1 1/2 hours, stirring occasionally until beans are tender.
