Simmer black beans with spices, balsamic vinegar, and aromatics until irresistible.
Ingredients:
  • 1 pound black beans, washed
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 bay leaves
  • 1.5 teaspoons paprika
  • 1.5 teaspoons ground cumin
  • 1 tablespoon dried oregano
  • 2 minced hot green chile peppers
  • 3 cloves garlic, minced
  • 0.25 cup balsamic vinegar
  • salt to taste
  • ground black pepper to taste
Instructions:
  • Place beans in a large bowl and cover them with water, allowing them to soak overnight for best results.
  • After giving the beans a quick rinse, place them in a big stock pot. Toss in onion, red and green bell peppers, bay leaves, paprika, cumin, oregano, chile peppers, and add water just enough to cover everything. Bring to a boil, then lower the heat and let it simmer for 1 1/2 hours.
  • Check beans for doneness; once tender, stir in garlic and balsamic vinegar. Season with salt and pepper to taste.
