Savoury shredded beef in zesty tomato sauce served with rice and black beans - a comforting and satisfying meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds beef flank steak
  • 1 cup beef broth
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 green bell pepper, seeded and sliced into strips
  • 1 small onion, sliced
  • 1 teaspoon chopped fresh cilantro
  • 1 tablespoon white vinegar
Instructions:
  • In a large skillet over medium-high heat, sizzle the flank steak in vegetable oil until nicely browned on each side, approximately 4 minutes each.
  • Place the steak in a slow cooker and gently pour in the beef broth and tomato sauce. Next, incorporate the tomato paste, bell pepper, onion, garlic, cumin, cilantro, olive oil, and vinegar. Mix everything together until fully combined.
  • Cook covered on Low for a maximum of 10 hours, or on High for 4 hours for optimal flavor development.
  • Pull apart the tender, seasoned steak in the slow cooker using two forks.
