Authentic Cuban-style pot roast slow-cooked with peppers and onions, mimicking the flavors of a classic ropa vieja dish found at Cuban eateries.
Ingredients:
  • 1 (2 pound) beef chuck pot roast
  • 2 red bell peppers, cut into large wedges
  • 2 green bell peppers, cut into large wedges
  • 1 yellow onion, cut into wedges
  • 1 sweet onion, cut into wedges
  • 3 cloves garlic
  • 0.5 (6 ounce) can tomato paste, or to taste
  • 0.25 cup red wine vinegar
  • 0.125 teaspoon garlic powder, or to taste
  • 0.125 teaspoon seasoned salt, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Score the beef roast and transfer it to a slow cooker alongside bell peppers, onions, and garlic. Add tomato paste and vinegar, then season with garlic powder, seasoned salt, salt, and black pepper.
  • Cook on Low for 7 to 8 hours until the beef is tender. Shred the beef into long strands using 2 forks, then mix it back into the slow cooker until combined.
  • Simmer gently, covered, until the meat and vegetables are melt-in-your-mouth tender, approximately 30 minutes.
