Tender beef roast cooked in seasoned tomato broth with peppers, creating a flavorful Caribbean shredded beef dish.
Ingredients:
  • 1 tablespoon avocado oil
  • 2 pounds beef sirloin tip roast
  • 1 (28 ounce) can fire-roasted diced tomatoes, drained
  • 1 cup beef broth
  • 2 onions, sliced
  • 3 bell peppers, seeded and sliced into strips
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 0.25 cup chopped fresh cilantro
Instructions:
  • In a large skillet over medium-high heat, sear the beef roast in avocado oil until golden brown on all sides, about 4 minutes per side. Transfer the roast to a slow cooker and pour in the tomatoes and beef broth. Add the onions and bell peppers to the slow cooker.
  • Combine tomato paste, garlic, olive oil, vinegar, cumin, and salt in a bowl, then drizzle over onions and bell peppers.
  • 1. Cook on High for 1 hour, then simmer on Low for 8 hours until beef is tender enough to shred.
  • Shred the beef using 2 forks on a work surface, then mix in cilantro and return it to the slow cooker.
  • Simmer for an additional hour on Low heat.
