Succulent Spanish-style shredded pork simmered to perfection, served with flavorful black beans and rice.
Ingredients:
  • 1.5 pounds boneless pork chops
  • 1 pint water to cover
  • 1 lime, juiced
  • 1 sprig fresh thyme
  • 8 black peppercorns
  • 1 tablespoon garlic powder, or to taste
  • 1 tablespoon onion powder
  • salt to taste
  • 1 large onion, halved and thinly sliced
  • 3 cloves garlic, peeled and sliced
  • 0.25 cup chopped fresh cilantro
Instructions:
  • In a large pot, mix water, juice of one lime, thyme sprig, peppercorns, garlic powder, onion powder, and salt. Bring to a boil. Add pork chops, reduce heat to medium-low, and simmer until meat is very tender, about 1 to 1 1/2 hours, adding water as needed to keep chops covered.
  • Allow the chops to rest in the flavorful broth for 30 minutes, then carefully shred the meat, discarding any unwanted fat. Set the shredded meat aside for later use.
  • In a large frying pan over medium-high heat, sauté shredded pork in olive oil until almost crisp, approximately 5 minutes. Add onion and garlic, cook until onion is tender yet slightly crisp, about 10 minutes.
  • Mix in the tangy juice from one lime and sprinkle in some fresh cilantro; then, enjoy your dish.
