Crispy fried pickles, perfect for snacking with a cold beer.
Ingredients:
  • 2 tsp dried oregano
  • 5.00 gm mild paprika
  • 1/2 tsp garlic powder
  • 5.00 gm ground cumin
  • 27.30 gm extra virgin olive oil
  • 4 beef schnitzels (uncrumbed)
  • 2 brown onions
  • 24.00 gm brown sugar
  • 125.00 ml beer
  • Olive oil cooking spray
  • 8 slices sourdough bread
  • Sliced Swiss cheese, to serve
  • Sliced tomato, to serve
  • Butter lettuce, to serve
  • Thick-cut chips, to serve
  • 56.88 gm extra virgin olive oil
  • 1 egg white
  • 20.00 gm cornflour
  • 4 large gherkins, sliced lengthways
Instructions:
  • In a glass or ceramic bowl, mix oregano, paprika, garlic powder, cumin, and 2 teaspoons of olive oil. Add beef and toss until well coated. Let it marinate for 10 minutes.
  • Thinly slice the onions. Heat the remaining oil in a large frying pan over medium-high heat, then add the onions. Stir and cook for 8 minutes until the onions are softened and lightly browned. Add the sugar and beer, and continue cooking for 5 minutes, stirring occasionally, until thick and caramelised.
  • Prepare the frickles: Heat oil in a medium deep frying pan or saucepan. Whisk egg white until foamy. Mix cornflour with egg white until smooth to make a thin batter. Add 1 tablespoon of cold water and stir. Dip gherkins into the egg white mixture one at a time, then fry in hot oil until golden on each side, about 1 minute per side. Transfer to a plate lined with paper towel to drain.
  • Preheat a chargrill pan or barbecue grill over medium-high heat. Brush both sides of the bread with oil. Grill for 2 minutes on each side until nicely charred. Grill the beef for 2 minutes on each side for a medium doneness or until it reaches your desired level of doneness.
  • Layer onion, beef, cheese, tomato, and lettuce on half of the bread slices. Top with the remaining bread slices and secure with skewers. Serve with chips. Enjoy!
