Japanese-inspired cucumber and carrot salad with refreshing crunch, drizzled in flavorful ginger dressing.
Ingredients:
  • 1 large English cucumber
  • 1 cup shredded carrots
  • 2 tablespoons rice wine vinegar
  • 0.5 teaspoon minced fresh ginger
  • 0.5 teaspoon salt
Instructions:
  • Peel the cucumber, slice it in half lengthwise, remove the seeds, and cut it into 1/8-inch thick slices. Add the cucumber slices to a medium bowl with the carrots.
  • Combine vinegar, sugar, ginger, and salt in a small bowl until fully mixed. Drizzle over cucumber-carrot mixture, ensuring everything is evenly coated. Chill in the fridge for 1 to 2 hours before enjoying.
