Cucumber and Avocado Sushi

DIY avocado sushi rolls with nori, sticky rice, cucumber, and avocado, topped with zesty wasabi and pickled ginger for extra flavor.
Ingredients:
  • 1.25 cups water
  • 1 cup uncooked glutinous white rice (sushi rice)
  • 3 tablespoons rice vinegar
  • 1 pinch salt
  • 4 sheets nori (dry seaweed)
  • 0.5 medium cucumber, sliced into thin strips
  • 1 medium avocado - peeled, pitted and sliced
Instructions:
  • In a saucepan, bring water and rice to a boil. Cover, simmer on low heat until rice is tender and water is absorbed, about 20 minutes. Take off heat, stir in vinegar and salt. Allow to cool for at least 5 minutes before serving.
  • Place a bamboo sushi mat on a clean surface and cover it with plastic wrap. Lay a nori sheet onto the plastic. Spread rice evenly over the nori, leaving a 1/2 inch strip at the bottom free. Place cucumber and avocado in the center of the rice. Roll the sushi once over the fillings and press gently. Roll again towards the exposed nori end to form a long roll. Moisten with water to seal if needed. Repeat to make more rolls.
  • Slice each roll into 6 pieces using a sharp, damp knife.
