Cucumber and lemon soba noodle salad recipe

Quick and flavorful Asian vegetarian noodle salad, ready in 15 minutes for a light meal or side dish.
Ingredients:
  • 180g dried soba noodles
  • 65.63 gm salt-reduced soy sauce
  • 42.00 gm lemon juice
  • 2 tsp sesame oil
  • 2.50 gm caster sugar
  • 1 small garlic clove, crushed
  • 1 large Lebanese cucumber, thinly sliced
  • 4 red radishes, trimmed, thinly sliced
  • 3 green onions, thinly sliced
  • 40.00 ml drained pickled ginger
  • Toasted sesame seeds, to serve
Instructions:
  • Boil noodles in a large saucepan according to package instructions. Drain and rinse under cold water, then transfer to a large bowl.
  • In a small bowl, combine soy sauce, lemon juice, sesame oil, sugar, and garlic, whisking with a fork. Add the mixture to noodles along with cucumber, radish, and onion. Toss everything together and transfer to a serving bowl. Top with pickled ginger, sprinkle with sesame seeds, and serve.
