Cucumber and mint bruschetta

Elevated cucumber sandwiches: crunchy gourmet bruschetta.
Ingredients:
  • 3 medium Lebanese cucumbers, halved, deseeded, chopped
  • 100g country-style reduced-fat natural yoghurt (Attiki brand)
  • 62.50 ml shredded fresh mint
  • 4 x 2cm-thick slices Italian bread
  • 1 garlic clove, extra, halved
Instructions:
  • Mix together the cucumber, garlic, yoghurt, and 2 tablespoons of mint in a small bowl. Season with salt and pepper to taste, and combine until well mixed.
  • Preheat the grill to medium heat. Toast the bread slices for 2 minutes on each side, or until they are lightly golden.
  • Infuse the bread slices with flavor by rubbing the cut side of the garlic halves onto them.
  • Spread the cucumber mixture generously on each piece of toasted bread. Top it off with extra mint and a sprinkle of black pepper before serving immediately.
