Upgrade caprese salad with crisp cucumber slices for a refreshing twist on a classic favorite.
Ingredients:
  • 0.5 cup aged balsamic vinegar
  • 2 large Roma tomatoes, sliced into 1/4-inch-thick rounds
  • 1 large cucumber, peeled and sliced into 1/4-inch-thick rounds
  • 1 (8 ounce) package sliced fresh mozzarella cheese
  • 1 cup fresh basil leaves
  • 1 tablespoon olive oil
  • salt and ground black pepper to taste
Instructions:
  • In a small saucepan over medium heat, gently simmer balsamic vinegar until it reduces to 1/4 cup, approximately 8 minutes. Let it cool to room temperature after removing from heat.
  • Once the balsamic vinegar has cooled, artfully layer tomatoes, cucumber, mozzarella slices, and basil leaves on a small serving platter until fully covered. Drizzle with olive oil and generously season with salt and pepper.
  • Finish the salad with a generous drizzle of the chilled balsamic vinegar and serve promptly.
